用料
排骨

1湯匙
生抽

老抽
半湯匙
蠔油
1湯匙
白糖
半湯匙
白胡椒粉

五香粉
1g
淀粉
2湯匙
細鹽
3克(2克撒在土豆上,1克腌制排骨)
香酥排骨蒸土豆的做法
- 排骨浸出血水。
- 排骨精修,把肥肉什么的剪掉。瀝干水后,倒到干凈的料理盆。
- 加1湯匙料酒。
(后面醬油,蠔油,包括淀粉,都用這個湯匙來量取。這個是普通的個人用湯匙。)
- 2勺生抽,1大勺蠔油,半勺老抽,半勺白糖,一撮細鹽,一撮白胡椒粉,一撮五香粉,幾片生姜,6個蒜瓣壓成蒜泥(沒有壓蒜器可以手工剁碎蒜頭),一起加入料理碗。
- 抓拌均勻。
靜置20分鐘。
- 然后加入2勺紅薯淀粉,抓勻。
- 土豆切拇指大的小塊。
- 排骨腌制入味后,中小火油炸至金黃。
油炸之前再把淀粉抓一抓,否則淀粉容易沉淀。
- 成色如圖。炸的過程中,排骨已經全熟,后面蒸是為了讓排骨酥爛,而且蒸汽作用下,能瀝出排骨中的油脂。

- 土豆平鋪一層,抓些白胡椒粉和細鹽,均勻撒上去。
- 把剛才排骨料理碗里的剩余醬料和蒜蓉倒進土豆里。
- 均勻排上油炸排骨。
- 蒸鍋上汽后,上蒸鍋隔水蒸25~30分鐘,時間長一些,以便土豆熟透,同時使排骨更酥更爛。
成功的作品,蒸到30分鐘,會看到土豆浸泡在排骨的湯汁里,也就是說肯定會有湯汁。
圖上就是剛剛蒸好的排骨,看樣子就是骨酥肉爛的感覺 ?
- 撒上蔥花,出鍋。
- 排骨在蒸制過程中,肉里的汁水和油脂會自然滲透到土豆里,使的土豆充分浸在排骨的湯汁里,讓土豆充分吸入排骨的肉香。而排骨則變得細膩綿軟,不油不膩。
說到這里要順便提一下,香酥排骨,不是說蒸出來口感很酥脆,是指排骨蒸出來很酥軟、酥爛的意思。
