- 先提制作波蘭種100克水?1克酵母攪拌均勻加入100克高筋粉室溫發(fā)酵1小時(shí)至2.3倍大(夏天發(fā)的快具體時(shí)間請(qǐng)根據(jù)自己的室溫溫度調(diào)節(jié)兩倍大就可以用了)
- 麻薯做法:糯米粉60克?玉米淀粉10克?牛奶130克?15克糖攪拌均勻過篩后倒入碗中蓋上保鮮膜用牙簽扎幾個(gè)孔上鍋蒸20-30分鐘~蒸熟后放溫?zé)峒尤?0克黃油,
- 戴手套操作上手揉至吸收后反復(fù)拉扯至能拉很長(zhǎng)就行了,包上保鮮膜備用
- 主面團(tuán)所有食材全部放入廚師機(jī)中(水量?jī)H供參考不要一次性加進(jìn)去,覺得干再慢慢加水)
- 攪拌成光滑的面團(tuán)
- 接著分成7個(gè)圓球蓋保鮮膜松弛15分鐘(天氣熱我是冰箱冷藏發(fā)酵的)
- 趁著面團(tuán)松弛把餡料分一下,芋泥餡搓成20克一個(gè)的長(zhǎng)條,麻薯也是20克一個(gè)(麻薯底下鋪上層保鮮膜不然會(huì)粘)
- 取一個(gè)面團(tuán)拍扁
- 搟成牛舌裝(不要搟的太薄)
- 放上芋泥麻薯
- 上面鋪上肉松
- 從中間壓著餡料捏起來
- 稍微搓一下搓成20厘米左右的長(zhǎng)條,一頭搟成扇形把另一頭包進(jìn)來

- 烤箱上200度下190度18分鐘
