醬牛肉是每年我家都會(huì)做的,有時(shí)候一家人出去外面飯店吃飯冷盤(pán)里有醬牛肉,基本上都會(huì)以我家的味道作為判斷基準(zhǔn),
“誒這個(gè)不錯(cuò),像咱家自己鹵的。”就是最高評(píng)價(jià)。
元旦前在東京的某水果批發(fā)商那里定了兩公斤牛腱子肉,這還是我第一次在日本買(mǎi)到牛腱子,順便就跟我爹爹討來(lái)了家里的做法。
網(wǎng)上醬牛肉的做法也看過(guò)不少,要加黃豆醬各種醬的,我家的這個(gè)只要生抽和料酒就夠。香料也是極簡(jiǎn),我家老吃貨經(jīng)常說(shuō)做牛肉不要那么多調(diào)料,吃牛肉吃的是牛肉味不是香料味,正好去腥提香,香料襯托肉香而不是壓制肉香才對(duì)。深以為然。
預(yù)留時(shí)間,先泡半天再腌一天,最后小火燉三個(gè)小時(shí)。調(diào)大廚也問(wèn)了調(diào)大廚的爸,為啥人家醬都要加各種醬,調(diào)爸說(shuō)醬油跟醬醬出來(lái)都是一個(gè)醬味。
不知道是不是吧,反正超簡(jiǎn)單,做出來(lái)也是真的好吃,
“誒就是這個(gè)味兒!”

家傳醬牛肉(最簡(jiǎn)單)的做法
- 1.泡
把整個(gè)牛腱子肉按股分開(kāi),從筋膜的地方切,處理成一股一條的肉。不用從肉中間切,也不用切塊。一條肉看著挺大挺長(zhǎng),一煮就縮到大概只有一半不到了。
準(zhǔn)備一個(gè)足夠大的盆,把肉放進(jìn)去,加清水沒(méi)過(guò),泡半天,期間勤換水,順便沖洗下肉,直到不怎么有血水出來(lái)。這一步?jīng)]拍照,上圖是第二步,清水泡一定不要省啊。
2.腌
泡好的肉拿出來(lái)沖干凈,放回干凈的盆里,倒入生抽,料酒或者黃酒,再腌一天。
肉:生抽:料酒=4:1:0.5
我腌了一天兩夜,非常入味。我是冬天做的廚房里冷就直接室溫放著,天氣熱了一定要放冰箱呀。
調(diào)爸說(shuō)牛肉是最吃鹽的,所以這個(gè)比例腌出來(lái)不會(huì)咸,剛好,就是有點(diǎn)費(fèi)生抽(捂臉
生抽因?yàn)槲以谌毡揪陀玫娜f(wàn)字牌的本釀造,國(guó)內(nèi)的話(huà)我喜歡六月鮮,但是調(diào)爸喜歡李錦記,個(gè)人喜好哈,總之醬油要好吃味道就不會(huì)差。
- 3.燉
準(zhǔn)備一大塊姜切片,二十粒左右花椒,兩個(gè)八角,一小撮小茴香,喜歡丁香的放幾粒丁香。
調(diào)爸經(jīng)常說(shuō)吃牛肉吃的是牛肉味,不是大料味,所以香料不要放太多,剛剛好去腥提香,襯托肉香才對(duì)。
- 腌好的肉不用洗,直接拿出來(lái)放鍋里,加上香料,沒(méi)過(guò)肉的清水,大火煮開(kāi)。
(腌過(guò)肉的醬油料酒不心疼的可以直接扔掉,也可以煮開(kāi)去一去里面殘留的一點(diǎn)血水,用來(lái)接著做別的菜。)
- 煮開(kāi)的時(shí)候馬上撇去浮末,因?yàn)榕萘俗銐蚓茫苌俸芎锰幚怼?/li>
- 煮開(kāi)十幾分鐘后轉(zhuǎn)小火,幾乎不冒泡的那種,燉2-4個(gè)小時(shí)(看牛肉的狀態(tài),不同的牛燉軟需要的時(shí)間不同),如果用的電飯煲直接放在保溫檔。不可大火煮太久,會(huì)柴,要小火慢慢燜熟。看這湯色,都是之前腌牛肉吃進(jìn)去的生抽哇。https://weibo.com/ttarticle/p/show?id=2309405169610583834772

- 剛燉好的牛肉熱切不好切,先冷藏半天或者一夜,第二天取出來(lái)再切就能切出均勻的片啦。
- 冷藏過(guò)的肉湯也凝成了凍狀,這湯可是精華,用來(lái)做牛肉面,胡辣湯,燉香菇都是一絕。
- 再來(lái)一張經(jīng)典牛腱子花紋。
- 切好牛肉,肉湯煮開(kāi)放碗里,加一大勺開(kāi)水調(diào)勻就是牛肉面湯底。煮好面再燙顆青菜,放進(jìn)碗里,碼上牛肉,再切點(diǎn)香菜小蔥撒上,就是超贊的牛肉面!
要是肉湯里再放點(diǎn)香菇煮一煮就是經(jīng)典的香菇牛肉面呀!
