消耗淡奶油 自制奧利奧奶油冰淇淋的做法
- 3個蛋黃加35克白糖攪拌均勻
- 倒入130ml牛奶、1克鹽,攪拌均勻
- 取一鍋加入適量冷水,隔水加熱牛奶蛋黃液,加熱過程中要不停用刮刀攪拌,水開后再熱5分鐘,主要是讓蛋黃殺菌,然后取出冷卻備用
- 在一個干凈的盆里倒入450克淡奶油,用電動打蛋器中低速打發,35克白糖分三次加入淡奶油
- 打發至打蛋器拎起有小尖角不掉落即可
- 將冷卻的牛奶蛋黃液倒入打發好的淡奶油中,用刮刀或手動打蛋器攪拌均勻
- 這是攪拌均勻的狀態
- 這時可以加入一些你喜歡吃的蔓越莓干、葡萄干,奧利奧餅干碎、可可粉或抹茶粉等等,然后攪拌均勻,攪拌次數越多,冰淇淋越細膩(我放的是奧利奧餅干碎)
