先在一個大盆里放500 克面粉,加2克食用鹽,再倒 260 克涼水,邊倒邊攪,攪成大面絮的樣子后,就下手揉成面團,扣上保鮮膜,讓它醒面五分鐘。
五分鐘后把面團取出來放到案板上,接著揉 3 到 4 分鐘,一直揉到表面特別光滑。然后把面團搓成長條,分成大小一樣的8個小劑子,之后再把每個小劑子都反復揉搓,揉到表面特別光滑,再搓成長條。
全部搓好后,找一個盤子,在底部和邊上抹點食用油,接著把搓好的粗面條放上去,表面和邊上都要均勻的抹上食用油,然后再蓋上保鮮膜,醒面兩小時左右。
時間一到,這面坯就醒好啦,將它放到案板上輕輕按扁,厚度大概0.5厘米,然后切成細長條,切好的面條兩手一抻,就變得又細又長的面條了。一次可以抻 上20 根,要是廚房廚房新手怕操作不明白的,也可以10根一抻,一家幾口人的面條輕輕松松幾秒鐘就能抻好。
