【醋溜白菜】
準備大白菜、蒜、小蔥、干辣椒、食鹽、白糖、生抽、雞精、白醋、香醋、食用油或者豬油。
大白菜要選用最新鮮的,最好是黃白菜,這樣的水分多,幫子寬大厚實,做醋溜白菜更脆嫩,比綠葉白菜炒得好吃。若是用有些蔫的白菜,再怎么炒都不會好吃。
做法:
1、一整顆大白菜去掉外面幾層,壞的黃的扔掉,好的留著燉煮,里面剩余的白菜炒著吃更好。
2、白菜一片片分開,逐片清洗干凈。(自己做菜盡量勤快些,別不洗就炒)
3、白菜洗凈后瀝水。然后將葉子揪下來,并分成小塊,放在一邊。幫子部分用刀切成小塊,想要更入味,可以斜刀切片,切面越大越入味。
4、蒜去皮切片。干辣椒切段。小蔥洗凈切段。(不喜歡吃辣就不準備辣椒)
5、鍋內加油,大火加熱,大約有五成熱時放入蒜、辣椒、蔥爆鍋,香味出來后轉小火,再快速倒一勺白醋。

6、激發出醋香味了轉大火,并立即倒入白菜幫翻炒。等有些微軟后再淋一勺香醋翻炒兩下。
7、接著倒入白菜葉子翻炒,看著有些打蔫了,加鹽、白糖、雞精翻炒,炒到入味。
8、最后淋入少許香油或者料油翻炒幾下,就可以出鍋了。(想要汁水濃稠包裹住白菜,可以加些淀粉水進去勾芡。如果不喜歡有淀粉的口感就不加)
看了以上做法,到底是先炒白菜還是先放醋?答案是先放醋,這樣可以激發出香味。很多人做醋溜白菜習慣先炒白菜,等炒得差不多了再放醋,這樣做出來不夠香,如果你也是這么做,建議改一改。
此外,放醋要放兩次,一次是白菜入鍋前,一次是白菜入鍋后。還有白菜葉和幫子要分開下鍋炒,這樣炒出來口感會更好。
