麻辣爆炒田螺的做法
- 買回來的田螺養2天吐沙,中途換水,淘洗5.6次,用剪刀把屁股剪掉,在淘洗3次,備用
- 準備八角,茴香,香葉,姜切條,大蒜拍開。
- 干辣椒跟小米椒切粒
- 鍋里放油,多一點,燒到5成熱,放干辣椒,姜絲,花椒,大蒜,翻炒出香味,然后放入兩勺郫縣豆瓣醬,火開小一點,火大了豆瓣醬會糊,繼續炒香

- 然后放入田螺翻炒均勻,再放入八角,茴香,小米辣,香葉翻炒,在倒入料酒,醬油翻炒3分鐘左右
- 倒入一瓶500毫升的啤酒,如果田螺少的話可以倒半瓶,剛好淹過田螺就好。燜5分鐘左右,然后再來大火收汁。最后放入少許生抽,耗油,雞精,白糖,花椒面,孜然粉,翻炒一下,關火
- 最后裝盤
