用料
材料:蛋清三個、細砂糖65克、無鹽黃油50克、香草精1/4勺、清水35克、低筋面粉100克
簽語餅干的做法
- 手寫語簽餅干里的小紙條
- 準備食材
- 黃油裝入小碗,微波爐加熱至融化,涼透后加入大碗中
- 雞蛋磕到碗里
- 分離出蛋黃
- 蛋清裝入無油無水的大碗,加入細砂糖
- 用手動打蛋器充分拌勻后順時針攪打
- 直到發白,有細膩泡沫即可。(不要打發過頭哈)
- 加入半勺香草精
- 攪拌均勻
- 加入融化的黃油
- 順時針拌勻
- 篩入低筋面粉
- 這時候不要再用手動打蛋器,換成膠皮鏟子,上下切拌至面糊細膩,避免起筋。

- 加入清水拌勻,蛋卷糊糊就做好了
- 最好的狀態不流動略微有花紋
- 面糊裝到裱花袋里
- 烤盤里放一張硅膠墊,裱花袋剪開口,擠適量面糊到墊子上。
- 用勺子背面以畫圈方式抹平薄面糊
- 不能太厚哦
- 烤箱上下火預熱170度,中層烤8分鐘左右。
- 烤好的餅周邊會變成金黃色
- 帶上手套取下餅皮,將提前寫好的紙條放在中間,將對折后邊緣捏緊,沿著碗邊再次對折成簽語餅的形狀。
- 整形好的簽語餅可以放入麥芬烤盤定型
- 注意的是烤好餅皮后,烤箱關火。但注意烤盤不要從烤箱中取出,取一張餅皮整形,然后再取另一張。直接取出烤盤會導致溫度下降造成餅干變酥脆最終碎掉。
