香干炒肉絲,做蓋飯絕配的做法
- 食材如圖,洋蔥忘了拍進去。香干就是表面棕色的豆干。芹菜去掉葉子。
- 里脊肉絲放入碗中,加入1勺料酒、1勺生抽、3克干淀粉,少許植物油,攪勻腌制。(1勺約7ml)
- 香干、洋蔥、芹菜切片。胡蘿卜去皮切片(不要切太?。?/li>
- 炒肉絲:鍋燒熱,倒入油至7成熱,大火炒肉絲至變色撈出。
- 鍋中再添一點油,放入1勺郫縣豆瓣醬,小火炒出香味。
- 加入洋蔥、胡蘿卜,轉大火不斷翻炒。
- 加入香干、芹菜,翻炒至洋蔥變透明變軟。
- 放入肉絲和 小半碗水(約60ml),調入1勺生抽、少許鹽,攪勻后稍微大火收一下湯汁,出鍋。
- 湯汁不要收太干,濃稠地蓋在米飯上,絕了!
- 咸鮮口味,不能吃辣的也能接受。
