面粉呀,在咱們的生活里那可是必不可少的一種半成品食材。能做成美味的包子、饅頭、花卷、面條等等。花卷好多人都喜歡吃,可卻很少有人在家里自己動手做。今天要給大伙分享一個五香大花卷的做法,不需要提前發面,做出來咸香松軟,簡單還好吃。
先在盆里放 500 克面粉,接著加 5 克酵母、10 克白糖,再倒入 260 克 30 度左右的溫水,把酵母化開。然后將水慢慢地全倒在盆里,邊倒邊攪,攪成大面絮狀,接著下手揉成光滑的面團。這一步得多揉會兒,這樣做出來的成品才會更松軟可口。
之后把面團放到案板上,撒點干面粉,把它改成長方形的大薄片,厚度大概 0.1 厘米就行。然后在表面撒點食用油,涂抹均勻,再在一半面片上撒食用鹽、五香粉,接下來,在下面一半的地方用刀切成細條,全部切好后,從沒切的那頭開始卷,卷的時候要緊實一些,然后再切成小段。
接著把它冷水放進蒸鍋,蓋上蓋子,密封發酵 40 分鐘。時間到了就能看到,體積明顯變大了一倍。拿起來感覺特別輕,這就說明完全發酵好了,蓋上蓋子開火,水開以后開始計時,蒸 15 分鐘,關火 7 到 8 分鐘后再開蓋把它拿出來。
