今天做的芋泥麻薯肉松貝果芋泥控必做 !這個搭配真滴太香啦~外皮酥脆內里餡料豐富,一口下去絕絕子~面團95克左右餡料我放了50克自己做主打一個滿滿當當,而且一個都沒有爆開哦~餡料切記不要太濕干一點真的不會爆!做法簡單也沒啥難度新手小白都可以做~

軟糯拉絲芋泥麻薯肉松貝果??做法簡單的做法
- 先提制作波蘭種100克水?1克酵母攪拌均勻加入100克高筋粉室溫發酵1小時至2.3倍大(夏天發的快具體時間請根據自己的室溫溫度調節兩倍大就可以用了)
- 麻薯做法:糯米粉60克?玉米淀粉10克?牛奶130克?15克糖攪拌均勻過篩后倒入碗中蓋上保鮮膜用牙簽扎幾個孔上鍋蒸20-30分鐘~蒸熟后放溫熱加入10克黃油,
- 戴手套操作上手揉至吸收后反復拉扯至能拉很長就行了,包上保鮮膜備用
- 主面團所有食材全部放入廚師機中(水量僅供參考不要一次性加進去,覺得干再慢慢加水)
- 攪拌成光滑的面團
- 接著分成7個圓球蓋保鮮膜松弛15分鐘(天氣熱我是冰箱冷藏發酵的)
- 趁著面團松弛把餡料分一下,芋泥餡搓成20克一個的長條,麻薯也是20克一個(麻薯底下鋪上層保鮮膜不然會粘)
- 取一個面團拍扁
- 搟成牛舌裝(不要搟的太薄)

- 放上芋泥麻薯
- 上面鋪上肉松
- 從中間壓著餡料捏起來
- 稍微搓一下搓成20厘米左右的長條,一頭搟成扇形把另一頭包進來
- 收口處捏緊朝下
- 全部整形好我直接室溫發酵的28度發酵了20分鐘(天氣熱不用烤箱發酵也行冬天不行哦)
- 鍋中放入500克水?30克糖,煮開后轉小火至底部微微冒泡的狀態放入貝果正反面各煮30秒撈出控干水分放入烤盤
- 烤箱上200度下190度18分鐘
- 餡料太豐富了,比買的好吃多了
