咱們把 800 克面粉擱盆里,再加上 15 克白糖、4 克小蘇打、6 克酵母,把它們給攪和勻嘍。接著把這堆東西分成兩份,在其中一半面粉里倒進(jìn)去 200 克南瓜泥,攪成面絮那樣子之后,揉成一個光溜溜的面團(tuán)。另一半面粉里加上 220 克大概 30 度的溫水,也揉成一個白白的光溜溜面團(tuán)。等兩塊面團(tuán)都揉好了,蓋上保鮮膜,放到暖和的地兒發(fā)酵 40 分鐘。
時間到后,將發(fā)酵好的面團(tuán)分別取出,揉勻排氣至原來的大小,然后再分別將它們搓長,切成大小均等的小劑子,白色的面積要比黃色的稍微大一點,然后用兩手捏壓的手法,將每個小劑子揉成小圓球。全部揉好以后,將黃色的面劑子給它邊部摁薄,里面放入一點豆沙餡,收口像包包子一樣,將它包緊,再將白色的面劑子邊部同樣捏薄,之后將包好的黃色豆沙球的面劑子放在白色面皮里面,收口也是像包包子一樣,將它捏緊團(tuán)圓,之后給它搟成牛舌狀。搟好以后用刀在表面將它切成長條,但底部不要給它切斷,然后再給它翻過來卷成長條
