1、在盆中放入400克面粉,加入5克白糖,兩克小蘇打,三克酵母,攪拌均勻之后倒入240克的溫牛奶,攪成面絮狀后下手揉成光滑的面團蓋上保鮮膜發酵40分鐘。
2、在準備300克面粉,加入兩克小蘇打,三克白糖,三克酵母,然后倒入160克提前蒸好攪碎涼涼的南瓜泥,攪成面絮狀后,揉成一個光滑的黃色面團,也扣上保鮮膜發酵至體積的一倍大。
3、時間到后,分別將它們揉勻排氣至原來的大小,然后將它們搓成長條切成小劑子,再將每個小劑子給它揉至表面光滑,然后把白色面劑子搓成中間粗兩頭細的錐形狀。
4、黃色面團給它搟成大圓餅,取一個碗壓沿著邊部壓成一個個的小葉子的形狀,這一個劑子可以壓成三片小葉子。
5、再將白色的面坯兒中間壓一個印兒,整理成香蕉的形狀,取一片黃色的葉子表面沾一點清水,放在白色面團兒上面一半以下的地方,三片面片兒邊部給它捏緊,整理一下形狀,這樣一個香蕉小饅頭就做好了。
6、之后將它放入蒸鍋進行二次醒發,15分鐘左右再開火,水開以后蒸15分鐘,關火不到6分鐘后開蓋將它取出。
