【所需材料】
200克面粉,2克鹽,125毫升清水。
餡料:白菜葉,一把粉條,一個洋蔥,一根胡蘿卜,2個雞蛋,生抽,蠔油,蔥花,胡椒粉,十三香。
【制作步驟】
1.200克面粉放入盆中,調入2克鹽,用125毫升清水和面,一邊倒一邊攪拌 ,攪拌成面絮狀。
2.下手揉成表面光滑的面團,面團偏軟一點。
3.然后搓長長條,再分成大小均等的面劑子。
4.把每一個都揉圓,準備一個盤子,底部刷點油,放入生坯,表面也刷點油,蓋上保鮮膜,醒面30分鐘。

5.準備幾片白菜葉,加點鹽,腌制出水分。
6.2個雞蛋攪散,下入鍋中炒熟炒散。
7.再倒點油,先下入洋蔥丁,炒香,再倒入胡蘿卜碎,翻炒幾下,調入生抽蠔油,翻炒均勻,最后倒入擠干水分的包菜,粉條,雞蛋,調入蔥花,胡椒粉,十三香,翻炒均勻即可。餡料就做好了。
8.醒好的面團拉扯不易斷,這種狀態是最好了。
9.案板上抹點油,取一片生坯,直接用手按扁。按成薄片。
10.放入適量餡料,先左右捏合。
11.然后扯住一頭把它蓋過來。
12.這樣就不會露餡料了。全部按照這個步驟做好。
13.起鍋倒油,下入生坯,直接用手按扁,表面刷點油,蓋上蓋子,開小火烙餅。
14.底部變色后翻面,一直烙到兩面顏色金黃餅面鼓起就可以了。

- 覺得清淡的話可以做個蘸料。
- 醒面這一步一定不要忽略,表面刷點油可以加快醒面過程。
