等牛肉湯自然冷卻后,過濾掉蔥姜等雜質,取大約1000毫升湯,備用。準備調味料:生抽醬油4-5湯匙,米醋4-5湯匙,白砂糖3-4湯匙,食鹽1茶匙,梨汁100毫升 ,味精少許,韓式辣椒粉1/2茶匙。
所有調味料加入冷卻的牛肉高湯中,用勺子充分攪拌,直到糖和鹽完全溶解。嘗一下味道,根據自己的口味進行微調。喜歡酸的多加點醋,喜歡甜的可以多放點糖。調好的湯汁蓋上保鮮膜,放入冰箱冷藏至少2-3小時,最好是能凍到湯汁邊緣微微起冰碴兒的狀態。
第三步:
準備冷面,有蕎麥冷面、玉米冷面等,選你喜歡的就行。我個人偏愛蕎麥的,更有韌勁兒。干冷面用足量冷水浸泡約30分鐘到1小時,泡的時候用手輕輕把面條揉搓開,防止它們粘連在一起。
鍋中燒一大鍋開水,水沸騰后,下入泡好的冷面。用筷子迅速攪散,煮2到3分鐘。嘗一下,沒有硬心,帶點嚼勁就馬上撈出。煮好的面條立刻撈出,放入準備好的冷水中反復揉搓、沖洗!搓洗到面條完全冷卻,摸起來滑溜溜的就大功告成了,瀝干水分。
第四步:
準備色彩繽紛、口感各異的配菜,黃瓜1根,洗凈后切成細絲或薄片;梨或蘋果半個,去皮去核,切成薄片;熟雞蛋剝殼,對半切開;辣白菜切成小段,牛肉逆著紋理切成薄片。
取一個大碗,將處理好的冷面放入碗底。在面條上依次碼好黃瓜絲、梨片、辣白菜、牛肉片,再放上對半切開的熟雞蛋。輕輕從碗邊倒入冰鎮好的冷面湯,湯的量以沒過面條大部分為宜。最后,撒上少許熟白芝麻和香菜,蔥花點綴。
