牛肉:200克
鮮蝦仁:150克
青椒:1個
紅椒:半個
姜末:1小勺
蒜末:1小勺
腌牛肉料:
生抽:1湯匙
料酒:1湯匙
玉米淀粉:1湯匙
白胡椒粉:少許
食用油:半湯匙
腌蝦仁料:
料酒:半湯匙
鹽:一小撮
白胡椒粉:少許
玉米淀粉:半湯匙
調味料:
蠔油:1湯匙
生抽:1湯匙
白糖:小半勺
鹽:適量
詳細做法:
1.牛肉逆著紋理切成薄片,放到一個干凈的碗里,加入1湯匙生抽、1湯匙料酒、還有少許白胡椒粉,抓勻。加入1湯匙玉米淀粉,繼續抓勻。淋上半湯匙食用油,再次抓勻,腌制15-20分鐘。
2.蝦仁洗凈擦干,把蝦線取出來,加入半湯匙料酒、一小撮鹽、少許白胡椒粉和半湯匙玉米淀粉,輕輕抓勻,腌制10分鐘左右。
3.青椒和紅椒洗干凈,去掉里面的籽和白筋,然后切成大小均勻的菱形塊或者小塊。再準備1小勺姜末和1小勺蒜末,提香去腥少不了它們!
4.鍋中倒入比平時炒菜略多一些的食用油,大火燒到油面開始微微晃動,有點點青煙冒出。牛肉片快速倒入鍋中,用筷子迅速劃散,讓它們受熱均勻。看到牛肉片一變色,大概也就30-40秒,就要立刻撈出來。
5.腌好的蝦仁倒進鍋中,快速滑炒。蝦仁很容易熟,看到它們變紅、身體卷曲起來,就可以馬上撈出來了。再補一點點底油,燒熱后放入準備好的姜末蒜末,爆香。切好的青紅椒塊倒進去,開大火快速翻炒幾下,炒到斷生。
6.牛肉片和蝦仁一起倒回鍋里,淋入我們提前調好的碗汁:1湯匙蠔油、1湯匙生抽、小半勺白糖。所有材料下鍋后,動作一定要快,大火快速翻炒均勻,讓每一塊牛肉、每一個蝦仁和配菜都均勻地裹上美味的醬汁。覺得淡了,再酌情加一點點鹽。
7.出鍋前勾一點點薄芡,用少量玉米淀粉加一點清水調開,淋入鍋中,快速翻炒均勻,看到湯汁變得稍微濃稠就可以了。所有食材都油光锃亮,香氣撲鼻,就可以關火,準備出鍋啦!
