首先準(zhǔn)備一盆清水,然后將紅豆放進(jìn)去浸泡一個(gè)小時(shí)以上。因?yàn)榧t豆比較難煮熟,所以提前浸泡可以縮短烹飪時(shí)間。
接著我們把大米淘洗干凈,然后放入電飯煲中。之后往里面加入適量的水,然后按下煮飯鍵開始煮飯。
緊接著我們就可以準(zhǔn)備配料了,先準(zhǔn)備一個(gè)小碗,在碗中打入兩個(gè)雞蛋,然后用筷子攪拌均勻備用。
鍋內(nèi)燒油,油熱后倒入打好的雞蛋液,等底部凝固以后,我們用鏟子給它翻個(gè)面,繼續(xù)煎至另一面金黃,然后盛出備用。
這個(gè)時(shí)候紅豆也應(yīng)該泡好了,我們將紅豆倒進(jìn)鍋里,開大火進(jìn)行翻炒,炒干紅豆表面的水分。
然后往鍋里加入沒過(guò)紅豆的熱水,并且在里面撒入一小把食鹽,這樣可以讓紅豆更加軟爛。蓋上鍋蓋,開中小火慢燉 20 分鐘左右。
20 分鐘過(guò)后,打開鍋蓋,可以看到紅豆已經(jīng)煮的非常軟爛了,這時(shí)我們?cè)侔阎凹搴玫碾u蛋也倒進(jìn)來(lái),然后加入一大勺生抽,翻拌均勻,讓每粒紅豆都裹上調(diào)料,這樣可以讓這道菜的味道更上一層樓。
等到湯汁快收干的時(shí)候,我們的紅豆就做好了,把它盛出來(lái)放在米飯上面,這道香甜軟糯的紅豆飯就完成了。
