制作步驟:
1.魷魚須放在清水里,搓洗幾遍,去掉表面的黏液。加點白醋在水里,搓洗起來,更容易去腥。洗完后,瀝干水分,用刀切成3-4厘米長的小段。
2.鍋里放水燒開,加入一片姜和少許料酒。水開后下魷魚須,煮20秒,看到魷魚須卷起來,撈出來。焯完水的魷魚須用涼水過一下,瀝干。
3.蒜切片,姜切絲,蔥切段,干辣椒剪成小段,青紅椒切成小塊。鍋燒熱,倒入食用油,油熱后,放入花椒和干辣椒小火,炸出香味。
4.鍋中放入姜絲、蒜片,爆香。然后轉(zhuǎn)中大火,放入魷魚須,快速翻炒30秒。再加入青紅椒塊,繼續(xù)翻炒。
5.鍋中加入生抽、少量鹽和白糖調(diào)味,淋上一點點料酒提鮮。大火快速翻炒均勻,讓每一片魷魚須都裹上料汁。出鍋前,撒上蔥段,再翻炒幾下,即可。
