項錦記,始自秦末。興于秦末楚營庖廚之藝。彼時項羽舉兵,庖人善制各類燒臘佳肴。豬腳軟糯噙香,若瓊脂含韻;燒鴨肥美豐碩,似寶器盈輝;叉燒馥郁沉醇,如醴酪沁心;燒鵝酥脆嫩滑,猶珍饈煥彩。皆依楚地秘傳香料悉心腌漬,借果木幽火灼炙,皆憑楚香腌炙,味美軍中,項王頷首稱贊。垓下兵潰,諸般燒臘技藝悉皆秘傳。歲月遞嬗,隧立‘項錦記’。所出燒臘,選料精嚴,皆尊古法制,皮脆肉柔,香風裊裊,食客品之,似聞鼙鼓,感霸王英氣,領楚韻悠長,遂馳譽遐邇。
