今天做一道一盤出鹵肉飯,有肉有菜還有雞蛋,加上紅蔥頭酥,太香啦^_^
用料
五花肉
400g
紅蔥頭
200g
雞蛋
2個
小油菜/上海青
3根
蒜片
適量
生抽
1大勺(炒菜勺)
老抽
1小勺
料酒
2勺
八角
1個
冰糖
1把(大概十幾粒)
鹵肉飯的做法
- 第一步,備菜。把紅蔥頭切片,另外切一些蒜片。
- 第二步,五花肉洗凈擦干,切丁。
- 第三步,把小油菜洗干凈。
- 起鍋燒油,炸紅蔥頭。
- 炸完紅蔥頭再炸一些蒜片。
- 炸香炸脆后撈出備用。
??注意在發黃的時候就要及時撈出,因為出鍋時會帶點溫度顏色還會繼續變深,但是焦了就會有苦味了。
- 起鍋留一些蔥油的底油煸炒五花肉,煸出油倒出一些(不然會有點膩),加入料酒爆香一下,再加入生抽、老抽稍微炒一下。
- 倒入開水沒過五花肉,開大火煮開,撇一下浮末。可以加入一個八角燉煮,也可以不加。

加入1/3的油蔥酥。
(個人認為分三次加能讓油蔥酥的味道持久而不被煮淡。)
轉中小火燉煮30分鐘。
- 燉煮期間,另用一鍋燒水,加一些鹽、油,水開后把油菜焯一下水撈出備用;
再煮兩個雞蛋,水開后煮7分鐘撈出過冷水,剝皮備用。
- 30分鐘后開蓋,水如果少了補一些水,加入雞蛋。
這里第二次加入油蔥酥,還是1/3的油蔥酥。
中小火繼續燉煮20分鐘,期間一定要注意水不能燒干了。
- 20分鐘后開蓋,倒入剩余的1/3油蔥酥,開大火收汁,收汁后裝盤。
- 可以用一個碟子裝,放上米飯,擺上青菜,雞蛋撈出來切半,再把鹵肉和肉汁撈出來澆在米飯上,就OK啦。

小貼士
1. 一定要用紅蔥頭,沒有紅蔥頭買小蔥頭,風味和大洋蔥完全不一樣;
2. 燉煮的時候可以加入一些豬皮,湯汁會更粘稠;
3. 鹵肉飯可以加香料也可以不加,這里我加了一顆八角,不想讓香料太搶味,可以根據個人口味添加。
