盡管有很多烤雞腿食譜了,但是各家做法還是不盡相同,根據(jù)自家烤箱的烘烤溫度時間及一些細節(jié)的處理還是記錄一下吧,也好方便自己和遠方的家人查閱,用心記錄了兩種口味,有需要的朋友可以參考!
用料
兩種做法:
A配方:
雞腿:2個
料酒:7克
鹽:8克
生姜粉:1克(或者生姜絲)
黑胡椒粉:1克
生抽:20克
草菇老抽:5克
蠔油:7克
白糖:8克
蜂蜜:12克左右
B配方:香辣孜然味
雞腿:2個
鹽:8克
蒜瓣:5個
生姜粉(或生姜絲):適量
生抽:20克
草菇老抽:5克
蠔油:7克
白糖:7克
料酒:7克
辣椒粉:適量
孜然粉:適量
烤雞腿(烤箱、兩種口味)的做法
- 兩個雞腿重量是740克!
把雞腿用流水好好沖洗干凈,用叉子在上面扎孔,盡量密集一點有利于入味!
這一步A、B做法都是要操作的步驟!
- A做法:
雞腿扎孔后先撒上料酒好好揉搓一下!
再撒鹽好好揉搓按摩一下!
再把胡椒粉和生姜粉撒上好好按摩一下!
再把生抽、老抽、蠔油和白糖加入再好好按摩一下!
最后密封起來放入冰箱冷藏一夜!
- 腌制10個小時左右后取出,用廚房紙巾要把上面沾汁液擦干凈。
倒入一點食用油按摩一下,雖然烘烤過程會出油,但雞腿瘦肉部分用點油口感還是不一樣的,雞皮涂油后口感種會油炸的感覺特別香,已做過口感對比后才選擇這樣操作的!
- 可以放在烤網(wǎng)上烘烤!但為了不把烤箱弄臟還要烤出干爽的成品,就在烤盤鋪上錫紙,上面放兩個鏤空的小鐵網(wǎng)蒸架,當然家里如果有大點的鐵網(wǎng)蒸架只用一個放在烤盤中間就最好了。
注意:一定把雞皮拉伸包括住雞肉這樣烤出來的雞肉口感更嫩!
- 放入預熱5分鐘后的烤箱中上層,200度烤20分鐘取出翻面烤!
- 烘烤20分鐘后取出!
- 把雞腿翻過來繼續(xù)烤!
- 翻面后送入繼續(xù)烤15分鐘!
- 再從烤箱取出!在雞腿兩面都涂上一層蜂蜜,然后把雞皮這面朝上再繼續(xù)烤8分鐘左右。

- 涂蜂蜜后容易烤糊(所以刷蜂蜜后要放烤箱中層而不要放在最上層),再繼續(xù)烤8分鐘左右雞皮有種焦焦的狀態(tài)就可以了(最后幾分鐘要勤盯烤箱注意觀察)。
- 時間到打開烤箱香氣撲鼻,太誘人了!
- 從烤箱取出在灶臺拍圖記錄!可以看到烤網(wǎng)下面有很多焦化物,所以個人更喜歡鏤空起來烤,表面會更清爽干凈一些!
下面把B配方的做法也簡單記錄一下!
- 把B配方的所有材料全部倒入好好按摩一下,把孜然粉和辣椒粉要加入適量一起來腌制!
- 腌制后把上面沾的姜蒜末和水分都要擦干凈,然后再涂油,烘烤時再撒上一些孜然粉和辣椒粉,烘烤溫度和時間都和A配方完全一樣!
烘烤20分鐘翻面后也要撒孜然粉和辣椒粉!
翻面繼續(xù)烤15分鐘取出再把雞皮朝上,再撒上一層孜然粉和辣椒粉,再繼續(xù)烤8分鐘!
- 一共烤了43分鐘(烘烤時間與雞腿大小和含水量都有關(guān)系),這個成品有點烤羊腿的感覺哈!
實際上個人更喜歡A配方刷蜂蜜的口感,雞皮微甜搭配番茄醬也特美味,所以A配方就花費大精力來記錄了!
注:剛開始用了6克鹽,剩下另外一個雞腿腌制了一天后才烘烤的還不咸!所以配方鹽的用量又調(diào)整到8克了,當然口感咸淡也與雞腿大小及扎孔密集度入味快慢有關(guān)了!
