要說這茄子啊，簡直就是蔬菜界的"海綿寶寶"，看著平平無奇，遇到油水那叫一個來勁兒！切丁剁碎了往肉餡里一拌，跟吸星大法似的把肉香全吸進去了。特別是剛出鍋那會兒，茄子丁都化成了半透明的膠質，裹著肉汁在舌尖上打轉兒，比白菜多了三分柔滑，比韭菜多了五分滋潤。關鍵是這貨便宜啊！三伏天里五塊錢能買一大兜，回家能蒸包子能燉菜，簡直是持家小能手。

老一輩常說"夏吃茄子賽人參"，這話真不是瞎掰。您瞧那蒸好的包子，茄肉吸飽了湯汁兒變得油光水滑，跟豬肉餡兒你中有我我中有你，咬下去既有肉的扎實感，又有茄子的綿軟勁兒。特別是晾涼了再吃，那層薄薄的包子皮被浸得半透明，透著里頭紫瑩瑩的餡兒，光看著就讓人直咽口水。

【茄子肉餡包子】 所需食材：茄子、豬肉餡、大蔥、姜、蠔油、香油、十三香、食用油、酵母、面粉

1、溫水里撒點白糖化開，酵母粉倒進去靜置5分鐘，等表面浮起一層泡沫就是激活好了。面粉倒進大盆，邊倒酵母水邊用筷子攪成絮狀，再上手揉成光滑面團，蓋保鮮膜放溫暖處發酵，夏天大概1小時就能發到兩倍大，戳個洞不回縮就對了。

2、茄子切小丁別過水！直接撒兩勺鹽殺水20分鐘，攥干后淋一勺香油鎖住鮮味。肉餡里分三次打半碗蔥姜水，順時針攪到黏糊糊能拉絲的狀態。茄子丁倒進肉餡，加蠔油、十三香、一勺熱油潑香，最后撒蔥花拌勻

3、發好的面團揉搓排氣，搓成長條切成劑子，搟成中間厚邊緣薄的皮；包餡時拇指按著餡兒，食指捏褶子轉圈收口，新手包18個褶子就夠漂亮

4、蒸鍋鋪濕籠布，包子之間留兩指寬空隙，二次醒發15分鐘再開火；大火上汽后轉中火蒸18分鐘，關火燜5分鐘再揭蓋，保準個個白胖不塌陷。
