巖燒芝士蛋糕『簡單美味0失敗』的做法
- 制作一個6寸戚風蛋糕,可以按這個菜譜,過程寫的非常詳細了。也可以制作其他蛋糕,古早蛋糕、芝士蛋糕、海綿蛋糕都可以
- 戚風開裂沒問題??脫模倒扣后頂面一定要平整,防止芝士糊涂后烤制過程中會流淌。
- 準備菜譜,切達芝士片2片大約25g,品牌不限。煉乳蜂蜜都沒有就等量細砂糖替代!
- 將牛奶、淡奶油、黃油、砂糖、煉乳/蜂蜜、材料依次稱量倒入一個可微波爐加熱的容器內。不愛吃甜的可以減少糖量。
- 微波爐中火加熱1分鐘,刮刀翻拌一下再叮1分鐘,拿出來大致這樣,用刮刀抄起底部觀察,必須要確認芝士片完全融化!!最后用刮刀攪拌均勻變成順滑的芝士糊。(也可以不粘鍋內明火加熱至芝士糊融化變濃稠時關火,明火加熱的芝士糊稍稍冷卻就可涂抹了,不需要冷藏)
- 拌勻后的芝士糊室溫冷卻后放入冰箱冷藏,待完全冷卻后變濃稠了再涂,我拍了下冷卻后的這個濃稠的狀態,可以涂更厚。 https://mip.mzppcfp.com

芝士糊可以前一晚花五分鐘做好,冷藏過夜,第二天直接拿出來用,非常方便!(不冷卻直接涂抹芝士糊也可以,分幾次涂抹,芝士糊盡可能厚,也可烤出奶皮效果。)
- 涂上厚厚一層芝士糊,撒上杏仁片,看著很像爆漿海鹽奶蓋蛋糕。
- 烤箱預熱,中層上下火200/180度,烤大約十分鐘??緯r不斷鼓起大氣泡的這個狀態是對的。(巖燒乳酪戚風視頻忘拍了,用的巖燒乳酪吐司)
- 剛出爐看著像焦了!絕對沒有,放涼后見證奇跡的時刻!太誘人了
- 切一塊嘗下滿滿芝士味,超贊!
- 厚厚一層奶皮層
