羊肉燉酸菜(連湯汁都不剩)的做法
- 羊排冷水下鍋,加姜片料酒,焯水,洗凈備用
- 鍋中倒油,加蔥姜小火炒香
- 倒入羊排,加1勺郫縣豆瓣醬,翻炒均勻
- 加生抽,老抽上色
- 繼續翻炒均勻
- 加清水,八角,香葉,干辣椒,花椒
- 大火煮開,還鍋蓋轉中火,燜燉15分鐘,試試咸淡,根據口味加鹽
- 酸菜提前泡1-2小時,洗凈,切小段
- 另起鍋,放油,蔥段,大蒜小火炒香
