先準備 250 克細的玉米面放進盆里,接著倒入 200 克開水,邊倒邊攪拌,最后攪成大的面絮,沒有干面粉的狀態,然后放在那兒晾到稍微有點涼、不燙手就行。大概兩分鐘吧,用手摸摸,不燙的時候在里面打一個雞蛋,加上 10 克白糖,把它們攪拌均勻。之后再加入 5 克酵母、準備250 克面粉,分幾次少量地倒進去,攪拌均勻,然后揉成光滑的面團。因為面粉的吸水性有所不同,所以這里面的面粉大家可以根據情況適當增減。揉扣上保鮮袋,放到暖和的地方發酵 50 分鐘。
在這期間呢,準備一把綠蔥葉,拿刀切碎放到碗里,加上 0.5 克小蘇打,再倒點少許的食用油和食用鹽,攪拌均勻。這樣拌好以后的蔥花,蒸好了不會發黃,會是翠綠色的。
時間到后,把發酵好的面團拿出來,放在撒了干面粉的案板上,開始排氣揉面。這一步要用力揉,把面團里的氣泡都揉出去,這樣做出來的花卷才會更緊實、更有嚼勁。一直揉到面團表面光滑,沒有明顯的氣孔為止。把它搟成長方形的大薄片,然后在表面抹點食用油,放上拌好的蔥花在撒上十三香和少許食用鹽,然后從一頭卷起來。

卷好以后每隔兩指寬切一刀,不過底部別切斷,之后用筷子在表面壓一下,兩只手把兩邊往里頭收一收,整理整理形狀,
