一提到紅燒肉,是不是口水都要流下來了?那色澤紅亮、肥而不膩、入口即化的美妙滋味,簡直是刻在咱們中國人DNA里的家常美味。今天呢,我想給大家分享一道我家餐桌上出鏡率超高,而且每次端上桌都會被一掃而空的硬菜——紅燒肉燉鵪鶉蛋!五花肉的豐腴與鵪鶉蛋的嫩滑完美融合,做法簡單,和我一起來學習制作。
1碗鵪鶉蛋冷水下鍋,水開后煮5-6分鐘。撈出后,立刻放入涼水中,浸泡一會兒。剝的時候,先輕輕把蛋殼均勻磕裂,然后在手里揉搓幾下,殼就成片剝落。一斤多五花肉切成3厘米左右的方塊,浸泡洗凈,冷水下鍋,加入幾片姜和1勺料酒,大火燒開煮5分鐘,撇去浮沫,撈出用溫水洗凈,擦干。
鍋里放少許油,燒至六七成熱,下入鵪鶉蛋,中小火慢慢炸到表面金黃,起一層薄薄的“虎皮”,撈出瀝油。鍋洗凈燒干,放少許底油,然后放入冰糖,開中小火慢慢炒。冰糖慢慢融化,然后開始冒大泡,顏色逐漸變黃。不停攪拌,當大泡轉為密集的小泡,顏色變成棗紅色。
第三步:
糖色炒好后,立刻下入焯好水的五花肉塊,快速翻炒,讓每一塊肉都均勻地裹上糖色。繼續煸炒一會兒,把五花肉里多余的油脂煸出來一些,這樣吃起來才不會膩。煸到肉塊表面微微發黃,邊緣有點焦香,推到鍋邊。放入蔥段、姜片、蒜瓣、八角、桂皮、香葉、干辣椒,炒出香味。然后,把五花肉和香料一起翻炒均勻。
第四步:
沿著鍋邊烹入2勺料酒,大火快速翻炒,酒氣蒸發,帶走肉腥味。接著加入3勺生抽提鮮,1大勺老抽上色,翻炒均勻,讓肉塊的顏色更加紅潤誘人。加入足量的開水,沒過五花肉3厘米。大火燒開后,轉成小火,蓋上鍋蓋,燉煮50分鐘。
第五步:
等五花肉燉到用筷子能比較輕松地戳進去,鵪鶉蛋放進去。用勺子輕輕推動,讓鵪鶉蛋也浸在湯汁里。蓋上鍋蓋,繼續小火燉煮20-30分鐘。肉爛蛋香,湯汁變得有些濃稠。嘗一下咸淡,加入適量的鹽調味。轉大火開始收汁,不停翻動,湯汁變得濃稠紅亮,關火出鍋啦!別收得太干,留點湯汁拌米飯,那滋味,簡直了!
