花生小面包的做法
- 面團材料中黃油以外的所有食材混合,
放入廚師機攪拌缸,
先用1檔低速將面團揉成團,轉2-3檔揉至面團呈光滑狀態
- 加入軟化的黃油,1檔將黃油逐漸揉入面團。轉2-3檔繼續揉至能拉出透明薄膜的階段
- 取出面團整理滾圓
- 放入容器蓋上保鮮膜或者蓋子
放在25-28度的環境中進行基礎發酵。
發酵至2~2.5倍大,手指蘸粉戳孔不回彈不塌陷
- 將發酵好的面團取出,輕拍排氣
稱重后將面團等分,每份約60克面團
- 滾圓后蓋保鮮膜醒發20分鐘
- 取一個松弛好的面團,搟成四周薄中間厚的圓形
邊上氣泡拍掉
- 包入適量花生醬
- 收口捏緊
- 稍稍壓平,用剪刀等距剪成花型
