高顏值的紫菜包飯的做法
- 大米淘洗兩遍,浸泡15分鐘再接通電飯鍋的電源,泡過的米燜熟后更松軟。
- 準備其它食材,胡蘿卜切細絲,胡蘿卜我喜歡生吃,如果不習慣可以平底鍋少油炒至微微變軟。菠菜焯水后擠干水份。
- 焯燙菠菜時用過濾后的水,我平時煮飯煲湯都會用過濾后的水,這樣才能全面保證食用水的安全健康。
- 水煮開后放一克鹽,再加幾滴食用油,這樣焯出來的菠菜還會保持綠色而不會變黃,菠菜下鍋后再開鍋煮一分鐘就可以撈出來了,不要煮太長時間,撈出后馬上過遍涼水然后控干水份。
- 5克淀粉(差不多是一平勺)加三勺清水攪成水淀粉,倒入蛋液中,再加一克鹽攪打均勻,攪好的蛋液最好再過一遍篩,這樣煎好的蛋皮會更細膩。
- 小火加熱平底不粘鍋 ,用油刷蘸油把鍋里刷一遍就可以(不要倒太多油,否則蛋液很難攤開),倒入蛋液轉動鍋使蛋液均勻鋪滿鍋底成圓形,表面凝固后借助硅膠鏟翻面,然后關火,用余溫再烘一會兒即可,出鍋切成長條。
- 平底鍋倒少許油,放入牛肉加10毫升料酒,10毫升生抽,10毫升老抽,把牛肉炒熟出鍋,不用再放鹽,醬油的咸度足夠了,牛肉片也可以換成牛肉餡,同樣方法炒熟即可。
- 燜好的米飯用飯鏟打散,盛出一大碗,大概300克米飯(這是兩個卷的量),加1克鹽。
- 再加5毫升香油攪拌均勻,(也可以加些熟白芝麻拌進去,不巧我的芝麻正好吃沒了)晾至手溫。米飯用芝麻油拌過后,放置時間稍長也不會變硬,因為油能鎖住水份。
- 菠菜焯熟擠干水份后不要再放鹽,菠菜用鹽拌過后易出水,影響口感。火腿也切成長條,為什么放了牛肉還要放火腿?因為我喜歡吃啊,食材部分可以按照自己口味隨意搭配,喜歡吃菜還可以切些黃瓜絲放進去。所有食材準備好就可以開始卷了。
- 取一片包飯用大張紫菜橫放在竹簾上, 如圖依次擺好胡蘿卜絲、蛋皮絲、火腿絲、菠菜絲,最后在上面堆好牛肉,因為牛肉會有少量湯汁(盡量控干湯汁哈),所以不要讓牛肉接觸海苔,否則海苔會軟掉。

- 如圖用竹簾提起海苔卷一圈并握緊,多出的海苔繼續卷在外邊。卷好后壓緊握實,收口朝下放置。有人會說米飯上直接鋪菜就可以啦,為什么還要那么麻煩先把菜包好?直接包當然可以,但我保證你包完的紫菜包飯沒有我包的漂亮,因為這是一個有顏值的紫菜包飯。而且對于新手來說這樣更好卷,包飯的時候不易散開。
- 再取一張紫菜,取一半拌好的米飯均勻的鋪好壓實,拌過芝麻油的米飯不粘手,比較好操作,如圖上邊留出大概3厘米的位置不鋪米飯,這樣正好卷一圈,米飯部分連接到一起不會重疊。把剛才卷好的菜卷放在鋪好的米飯上面,提起竹簾卷起。
- 卷好后收緊竹簾,滾動幾下壓實整形成圓柱體。
- 用手蘸少許芝麻油抹在紫菜包飯上,這樣紫菜會保持一段時間不變干。
- 最好備一塊干凈的濕布,每切一下就把刀擦干凈,這樣可以保持切面的平整(用鋸齒刀切效果更好)。
