咱先在盆里放 500 克面粉,接著加入 1 克小蘇打、2 克食用鹽,5克白糖,然后打一個雞蛋進去,先把雞蛋攪散。再放一包油條膨松劑,隨后準備 300 克溫水,分次少量倒進去,邊倒邊攪拌(要知道做油條的和面方法跟蒸饅頭、蒸包子不一樣,可別反復揉搓)最后攪到沒有干面粉的時候,加 15 克食用油,用雙手揣和折疊的方式揣勻就行,千萬別反復揉搓。剛開始面團不容易弄,可以扣上保鮮膜醒面10分鐘,之后再用按壓折疊的方式揣勻,一直到最后,面團表面特別光滑就行,稍微整理整理形狀,蓋上保鮮膜,醒面兩個小時左右。

時間一到,面團就醒發好啦。別揉,直接在案板上多撒些干面粉,把面團放上去,整理整理形狀,搟成長方形的大厚片,厚度大概跟一根筷子厚就行。然后切成兩指寬的長條,要是家里的油鍋裝不下太長的油條,就從中間斷開,接著在面皮中間劃一道水痕,兩個面坯摞在一起,再用筷子從中間壓一下,這步弄好以后,蓋上保鮮膜再醒發 20 分鐘。
時間到了,用手稍微抻長,然后放進七成熱的油鍋里。這時候要用筷子輕輕攪動一下,等油條完全浮起來以后,每隔30秒給它翻一個面,這樣能讓它兩面受熱均勻,熟得更好。一直炸到四面金黃,而且體積明顯變大,就說明完全熟了,可以出鍋啦!
