買回一只處理好的三黃雞,里外徹底清洗干凈,剪去雞屁股和雞爪的指甲,瀝干水分。雞身上均勻抹上薄薄一層鹽和少許料酒,給雞做個輕柔的“按摩”,腌制20-30分鐘。
在準備好的深鍋中,加入150毫升生抽、50毫升老抽、80克冰糖、50毫升料酒。接著放入拍扁的姜塊、打結的小蔥、3顆八角、一小段桂皮和3片香葉。然后,加入清水,水量沒過雞身的三分之二。開中大火,將醬汁煮開,用勺子攪拌一下,確保冰糖完全融化,香料的香味開始散發出來。
第三步:
醬汁煮沸后,小心地將腌制好的整雞放入鍋中,盡量讓雞胸朝上。待鍋內醬汁再次煮沸后,轉中小火,蓋上鍋蓋,讓雞在醬汁中慢慢燜煮。整個燜煮時間35分鐘,每隔5-7分鐘,打開鍋蓋,用大湯勺舀起鍋中的熱醬汁,反復、均勻地淋在雞身上。燜煮到一半時間,小心地給雞翻個面,讓另一面充分浸泡在醬汁中并受熱均勻。翻面后,繼續蓋蓋燜煮,再保持淋汁的動作。
第四步:
用一根筷子插入雞腿最厚實的部位,流出的汁水是清澈的,沒有血水,說明雞已經熟了。關火!蓋緊鍋蓋,讓雞繼續浸泡20分鐘。整雞從醬汁中撈出,放在一個干凈的盤子上。此時的豉油雞已經色澤紅亮,香氣撲鼻了!在雞皮表面刷上一層薄薄的香油,晾涼一會兒,不燙手了再斬件。鍋里剩下的醬汁過濾掉香料渣,開大火稍微收濃一些,澆汁!
