用料:
長茄子、豬肉末、洋蔥碎、蔥花、姜絲、蒜片、辣椒段。
調料:
豆瓣醬、生抽、老抽、蠔油。
做法:
1. 長茄子切條,用鹽腌制一會去除苦澀味。鍋中放水燒開,加入一點食用油和鹽,放入茄子焯一下撈出控干水分備用。
2. 鍋中放油,下入肉末炒至變色,再加一勺豆瓣醬炒出紅油,接著放入洋蔥碎、蔥花、姜絲、蒜片、辣椒段爆香。
3. 加入生抽、老抽調好顏色,倒入半碗清水,再加少許蠔油提鮮,把焯好的茄子放進去,輕輕翻拌均勻,蓋上鍋蓋燜煮幾分鐘。
4. 茄子軟爛后,大火收汁即可關火出鍋,撒上蔥花點綴,這道醬香味十足的醬燜茄子就做好了。

用料:
茄子、面粉、雞蛋、面包糠。
調料:
食鹽、白糖、生抽、醋、番茄沙司。
做法:
1. 茄子去皮切成條,先裹一層薄薄的面粉,再裹上一個全蛋液,最后裹上面包糠,這樣炸出來的茄子外酥里嫩,非常好吃。
2. 鍋內多倒點油,油溫六七成熱時,把裹好面糊的茄條依次放入鍋中,炸至金黃酥脆撈出控油。
3. 炸茄條的時候來準備料汁,碗中加入兩勺生抽,三勺番茄沙司,一小勺白糖和一丟丟醋,攪拌均勻備用。
4. 鍋中留底油,放入茄條,淋上調好的料汁快速翻炒幾下,讓茄條充分吸收料汁,這樣一道酸甜可口的糖醋茄條就做好啦!
