準備食材:豬小排一斤左右,海帶半斤,蔥一段,姜幾片,八角兩顆,香葉三片,花椒一小撮,干辣椒兩個,生抽兩勺,老抽一勺,蠔油一勺,料酒一勺,白糖一勺,食用油適量。
第一步,把買回來的豬小排剁成段,然后冷水下鍋焯水,加入少許的料酒去腥,水開后撇去浮沫撈出備用。
第二步,海帶提前用清水浸泡兩個小時以上,泡發以后清洗干凈切成菱形塊。
第三步,在鍋中倒入少許的食用油,油熱以后放入拍散的大蒜和切好的蔥花爆香,接著放入處理好的排骨,翻炒至表面微黃。
第四步,把準備好的調味包放入鍋中,再依次加入生抽、老抽、蠔油、料酒和白糖,翻炒均勻上色。
第五步,往鍋中加入沒過食材的熱水,大火煮開以后轉中小火慢燉半小時。
第六步,半個小時過后,加入泡好的海帶,再繼續燉煮半小時,期間要時刻注意湯汁不要收干,以免糊底。
