我們來包餡料吧!在粿皮中間放上喜歡吃的餡料,像包湯圓一樣把它搓圓。鍋中鋪上一層紗布,刷上一層油防粘,再把做好的粿放入鍋中大火蒸 10 分鐘,出鍋前撒上一層芝麻點綴一下,這樣紅桃粿就做好了。

第一種:綠豆沙。綠豆提前泡一晚,撈出瀝干水分,放進電飯煲煮熟,放涼以后加白糖、花生碎、麻油、咸蛋黃等一起打成細膩的泥狀即可。
第二種:花生糖餡。花生米炒香去衣,切碎備用。紅糖、麥芽糖一起熬化,趁熱倒進花生碎里面,快速翻拌均勻,待它稍微冷卻定型之后,切成小塊即可。
第三種:五仁餡。將瓜子仁、杏仁、核桃仁、黑白芝麻、葡萄干混合在一起,最后可以加點糖桂花增加風味。
第四種:肉松雞蛋餡。雞蛋和肉松搭配起來簡直是絕配,簡單又好吃。
第五種:芋泥餡。芋頭去皮切片,上鍋蒸軟,搗成芋泥,加些牛奶、淡奶油、砂糖調味即可。
第六種:南瓜餡。南瓜去皮切片蒸熟,搗成泥,加少許牛奶、砂糖調味即可。
第七種:芝麻餡。白芝麻炒香,研磨成粉,加少量的豬油和糖拌勻即可。
第八種:紅豆沙餡。紅豆提前浸泡一夜,然后和清水一起下鍋,大火煮開轉小火慢燉至軟爛,過濾掉豆渣,加白糖調味即可。
