2. 胡蘿卜切條,青椒對半切開去籽后也切成條,洋蔥切絲備用。
3. 鍋內燒油,油溫六成熱時下入肉段,保持中火炸至表面焦黃,撈出控油。
4. 另起鍋,倒入一點底油,放入蔥姜蒜爆香,再加入一勺豆瓣醬炒出紅油,接著放入胡蘿卜快速翻炒幾下,使胡蘿卜變軟。
5. 接著把肉段倒進來,加入兩勺生抽、一勺老抽調色,一勺蠔油提鮮,半勺白糖提味,快速翻炒均勻,讓肉段裹滿料汁。
6. 最后加入青椒和洋蔥,快速翻炒幾下,淋入一點水淀粉勾個薄芡,翻勻即可出鍋裝盤。
