準備一塊鹵水豆腐放入盆中,倒入燒熱的水給它浸泡一下,燙上兩分鐘。之后再準備幾個皮蛋,有的地方也給它叫做松花蛋,放入鍋中加入清水煮上5分鐘(優質的皮蛋應該是蛋清呈茶褐色,有明顯的彈性,上面帶有松枝花紋;蛋黃外圍呈黑綠色或藍黑色,中心呈桔紅色。這樣的皮蛋切開后,斷面色澤豐富,口感最佳)
利用這期間我們來調一點萬能的調料汁,準備半頭大蒜去掉外皮,給它拍扁剁碎,切好的蒜末放入小碗中,然后依次加入十三香,香醋,倒入燒熱的油給它炸一下,激發香味兒,將它攪拌均勻,再依次加入生抽,蠔油,少許的香油,食用鹽,白糖,味精,一勺秘制的辣椒油,(可根據個人口味調整用量,不能吃辣的朋友可以不放)攪拌均勻放到一旁備用。
時間到后將煮好的皮蛋撈出,放入涼水中,過一下涼,然后給它去掉外皮,一切八瓣。再將泡好的豆腐取出,從中間橫片一刀,然后再豎切兩刀,最后改刀切成小骰子塊,放入盤子中間。
轉圈放入切好的皮蛋,最后再澆上提前調好的料汁兒,就再撒入一點綠蔥花點綴一下。
