接著在鍋里加入適量的油,放入冰糖小火慢慢熬化。待糖色變成紅色時,倒入鵝肉快速翻勻,讓每一塊鵝肉都裹上一層紅亮的糖色,這樣做出來的鵝肉會更入味。
等鵝肉全部上色后,就往鍋里加入之前調好的調味汁,繼續翻炒均勻。這時可以嘗一下味道,如果不夠咸的話,就再加點鹽。接著就可以開大火收汁了。
當湯汁快收干時,就可以把鵝肉盛到盤子里備用。
接下來就是最刺激的環節了,往鍋里加入大量的油,燒至八九成熱時,把鵝肉倒進去快速翻拌幾下,再往里面加入高粱酒,這時候一定要注意,因為酒精遇高溫會瞬間爆發出大量火焰,所以大家千萬要做好安全措施,不要被燙傷。
等火苗變小后,就把鵝肉連同湯汁一起轉移到餐桌上,再將剩下的鵝雜也一起倒進去。最后撒上蔥花和白芝麻點綴增香即可上桌。
