抖音里看到“小高姐的魔法調料”分享的紅燒牛尾,隔著屏幕流口水,今天嘗試了一下,果然好吃到哭,在這記錄一下做法,分享給喜歡的廚友們~

小高姐的紅燒牛尾的做法
- 新鮮牛尾骨用冷水浸泡一會兒,方便洗去骨頭渣子,洗凈后控干水分
- 盤子里放適量面粉,將牛尾骨均勻裹上一層面粉(據小高姐說裹一層面粉是為了牛尾骨燉煮過程中表面不容易散開,還能使最后的湯汁濃稠)
- 鍋里放適量油,將裹好面粉的牛尾骨放入鍋中煎一下,盡量煎至每個面都金黃(原作者小高姐用的鑄鐵鍋直接煎,我沒有鑄鐵鍋,用平底鍋煎的)
- 各個面都煎至金黃后倒入開水沒過牛尾骨(因為沒有鑄鐵鍋,我是煎黃后從平底鍋倒入炒鍋加入開水燉的)

- 加入蔥、姜、八角、香葉、桂皮、小茴香和花椒(我把小茴香、八角和花椒放調料袋子里了,方便挑出來),因為家里有小孩不能吃辣,所以這一步我省略了辣椒,朋友們喜歡吃辣的在這步放入辣椒啊,再加入鹽、生抽、老抽
- 大火燒開轉中小火蓋蓋子燉兩個小時
- 燉牛尾骨的時候可以將白蘿卜和胡蘿卜去皮后切滾刀塊備用
- 兩個小時后肉燉熟了,挑出八角等調料,放入兩種蘿卜塊,繼續燉煮半個小時
- 出鍋前檢查一下湯汁濃度,滿意就可以出鍋享用啦(小高姐說問世間有沒有比牛尾骨更好吃的菜,她說有,那就是牛尾骨里面的蘿卜)
