我老家內(nèi)蒙古的,從小愛(ài)吃?xún)?nèi)蒙古錫林郭勒盟的羊肉,尤其是羊肉串簡(jiǎn)直不要太好吃了。現(xiàn)在定居山東了,發(fā)現(xiàn)這邊的羊肉真的吃不慣,專(zhuān)門(mén)讓我姐從內(nèi)蒙古給我發(fā)了羊肉回來(lái)。但是家里沒(méi)有烤羊肉串的爐子也不會(huì)烤呀,從下廚房上面找到了新疆大廚的課程趕快學(xué)起來(lái)。大廚也是用爐子烤,沒(méi)事家里有個(gè)小烤箱改改應(yīng)該也一樣,終于我的烤箱版新疆掛糊羊肉串成功了!

烤箱版新疆正宗掛糊羊肉串的做法
- 把羊肉切成塊狀,泡在涼水里面,把羊肉的血水泡出去,這樣做出來(lái)的羊肉不膻氣。
- 泡好以后的羊肉撈出來(lái)準(zhǔn)備調(diào)味
- 準(zhǔn)備洋蔥一個(gè),蔥一根,姜一小塊
- 蘋(píng)果一個(gè),梨一個(gè),這兩種水果都會(huì)用一半,主要的作用是給羊肉增加果香味。大蒜幾粒
- 把洋蔥切絲,大蔥切絲,姜切末,另外加2小勺的鹽給肉先加個(gè)底味。把這些料和羊肉攪拌均勻,先腌制一會(huì)兒,大約腌制10分鐘左右。

- 把梨,蘋(píng)果切片,大蒜拍碎。
- 把上一步切好的料也放在羊肉里,一般這個(gè)時(shí)候洋蔥這些已經(jīng)腌制了一會(huì)兒了,我偷懶沒(méi)有分部來(lái)做一起放進(jìn)去腌制了。一般要腌制半個(gè)小時(shí)以上,讓香味滲入羊肉,稍微多腌制一會(huì)兒也沒(méi)有影響。
- 下面開(kāi)始調(diào)掛糊羊肉串的糊,把我在上面寫(xiě)的掛糊配料混合在一起就可以了。這個(gè)糊我是專(zhuān)門(mén)和新疆買(mǎi)大廚學(xué)的,味道非常棒。把上面的掛糊調(diào)料攪拌在一起,我家父母不吃辣所以我沒(méi)放,再一個(gè)我進(jìn)行了腌制所以我沒(méi)另外加洋蔥。
這個(gè)掛糊調(diào)料完全可以直接刷在不進(jìn)行腌制的羊肉上烤制,但是我更喜歡腌制一下在刷。
- 把羊肉穿在烤箱的小吊簽子上去,最上面一定是要穿一塊羊油的,這樣烤出來(lái)的羊肉串才不會(huì)干。
- 忙著刷調(diào)料糊和把簽子掛在烤箱網(wǎng)上去,直接忘記了拍照片,等我下回拍了照片再補(bǔ)上吧。
- 羊肉串下面可以放一個(gè)烤盤(pán)里面墊上厚片的土豆,滴下來(lái)的羊油就把土豆煎熟了,特別香
- 把掛好的羊肉串放入預(yù)熱好的烤箱,220度上下火先烤20分鐘,20分鐘后下面的土豆烤好了,羊肉串也基本上不怎么滴油了,就可以拿走土豆了了,把下面的加熱管露出來(lái),繼續(xù)烤10-15分鐘,這樣下面羊肉串表面也烤酥脆了。
注意:因?yàn)槊考业目鞠涔β屎托Ч灰粯樱局频倪^(guò)程中要多多觀察,不能直接照搬,我的時(shí)間只是給大家做個(gè)參考。
- 把羊肉串取下來(lái)開(kāi)始享用吧!
- 咬一口外酥里嫩,而且掛糊完美的把羊肉的汁水都封在了里面,這樣里面的羊肉超級(jí)嫩滑,味道好極了!
這種方法烤出來(lái)的羊肉串,沒(méi)什么牙的老人都能輕松食用!
小貼士
1)調(diào)了掛糊可以不用腌制羊肉直接掛糊烤制,一樣美味。腌制只是個(gè)人愛(ài)好,不是必須步驟。
2)烤制時(shí)間只能作為參考,因?yàn)楦骷业目鞠涔β什煌枰∠膳畟冃浉鐐冏约喝剃P(guān)注成熟的程度。
