2、刀工有講究，改刀要見骨魚背上的肉最厚實，得斜著劃上三四道深口子，刀尖要劃到魚骨的位置。這可不是為了擺盤好看，而是讓蒸汽能鉆進魚肉深處。上周鄰居王嬸蒸魚沒改刀，結果外面肉都蒸老了，貼著魚骨的肉還帶血絲呢！

買回來的活鱸魚別急著下鍋，先讓它在清水里吐半小時泥沙。處理時用刀背拍暈魚頭，用鋼絲球逆著魚鱗方向刷洗，特別注意魚鰓和肚子里的黑膜要摳干凈，這可是腥味重災區！

魚身兩面改刀后，淋2勺料酒全身按摩，魚肚子里塞滿姜片蔥結。這時候千萬別急著撒鹽！鹽會讓魚肉提前脫水，蒸出來發柴。腌10分鐘后，記得把滲出來的血水倒干凈。

第三步：蒸鍋水開后，把墊好蔥姜的蒸盤放進去。重點來了：一定要開大火！蓋上鍋蓋后別老掀開看，蒸汽跑光了魚肉會夾生。手機定時8分鐘，這時候剛好能炒個青菜。
