湖南小炒肉的做法

- 五花肉切薄片,去不去皮看自己,再備一點瘦肉切片用料酒醬油腌制一下,蒜切片或拍破,辣椒切滾刀片,辣椒選擇要辣一點的皮薄一點的,青椒尖椒這種就不適合!豆豉大超市或者網上都有賣,要是有湖南四川農家的更好。
- 鍋中不放油,中到大火,先把辣椒炒至斷生,少放點鹽也行,勺子或者鏟子不斷按壓成熟快,炒干辣椒水分,虎皮狀更好(就是辣椒表皮變白),盛出備用
