- 先做提前準備工作,烤箱提前預熱,155度30分鐘,烤盤鋪上油紙,烤盤28×28
- 蛋清蛋黃分離,蛋糕只要蛋清,蛋黃不用。蛋清冰箱冷凍10分鐘左右,周邊有冰碴即可
- 玉米油,椰漿,牛奶充分拌勻
- 篩入低筋面粉拌勻

- 蛋清中加朗姆酒,沒有朗姆酒滴幾滴檸檬汁。打蛋器高速打發,打到大泡泡時第一次加糖(糖分3次加入)
- 打到小泡泡第二次加糖
- 有明顯紋路時第三次加糖
- 打蛋器提起時,小彎鉤狀態即可
- 打發好的蛋清取三分之一加入面糊中拌勻
- 倒入剩下的蛋清中,攪拌鏟翻拌均勻。有椰漿的緣故,會出現消泡,所以攪拌時不要用力,不要攪拌過度
- 倒入烤盤刮勻,155度25分鐘左右,每個烤箱溫度不一樣,根據自己烤箱溫度而定,隨時注意表面,不要上色
- 出爐晾涼,放入奶油(淡奶油打發到7分左右,加入椰漿)
- 表面刷一層奶油,撒上椰蓉
- 椰香濃郁,唇齒留香
