- 鮮酵母用20克清水化開;
- 與主食材中除黃油和鹽以外的所有材料混合;

- 滾圓,覆蓋保鮮膜,常溫發(fā)酵至二倍大;

- 倒入蘋果丁,中小炒干水分;
提示:倒入蘋果丁時,焦糖遇冷會瞬間凝結,但隨著溫度升高,會慢慢融化。
- 加入黃油,炒制完全融化;
- 關火,冷卻備用;
- 發(fā)酵好的面團排氣,均分兩份,滾圓,覆蓋保鮮膜松弛10分鐘;
- 松弛好后,搟成30×20厘米的長方形片狀;
- 在底端1/2處平鋪一層焦糖蘋果;
- 將上端折疊過來,稍加整理,自頂端2厘米處均分8等份;
- 每一份都朝一個方向擰幾圈;
- 自上向下卷過來,底邊朝下,碼放到吐司盒里;
- 覆蓋保鮮膜,室溫發(fā)酵至9分滿,表面涂抹一層蛋液;
- 送入提前預熱的烤箱,下層,上下火180°C,烘烤40分鐘,脫模冷卻;
提示:如果表明上色過快,及時覆蓋錫紙。
- 餡料充足的焦糖蘋果吐司;
- 如果不喜歡顆粒狀,可以小火加蓋多熬煮一會兒,直至果肉軟爛;
- 操作同上碼入吐司盒,室溫發(fā)酵至9分滿,表面涂抹一層蛋液;
- 下層,上下火180°C,烘烤40分鐘;
- 脫模冷卻;
- 手撕焦糖吐司。
