先在盆里放 500 克面粉、5 克白糖、5 克酵母,接著倒入 260 克 30 度上下的溫水,先把酵母化開,再把剩下的水慢慢倒進(jìn)去,攪成大的面絮狀,然后下手揉成光滑的面團(tuán),蓋上保鮮膜,放到暖和的地方發(fā)酵 50 分鐘。
趁這工夫,咱們準(zhǔn)備一斤豬肉餡,三分肥七分瘦,擱盆里加少許十三香、食用鹽、生抽,再添一點(diǎn)點(diǎn)老抽上色,還有蠔油、白糖、雞精,倒上食用油攪拌均勻,放一邊備用。接下來再準(zhǔn)備點(diǎn)酸菜,洗干凈,把水分攥干,然后剁碎,酸菜的量隨自己喜好隨便加。把剁碎的酸菜放大碗里,再準(zhǔn)備一根大蔥,切點(diǎn)蔥花放進(jìn)去,順著一個(gè)方向攪拌均勻,餡料拌好先放一邊。
這時(shí)候面團(tuán)發(fā)酵好了,體積明顯大了一倍,里面蜂窩組織可豐富啦,這就說明發(fā)酵好了。把面團(tuán)取出放在撒有干面粉的案板上,揉面排氣,把面團(tuán)中的氣泡全部揉出去,揉至面團(tuán)表面光滑,恢復(fù)到原來大小,再搓成細(xì)長條,切成大小差不多的小劑子,每個(gè)劑子大概 50 克左右,表面撒點(diǎn)干面粉,取一個(gè)面劑子,用搟面杖搟成中間厚、邊緣薄的圓形面皮,注意不要搟得太薄,不然包子容易露餡。
用勺子舀適量放涼的酸菜餡料放在面皮中央,然后開始包包子。從面皮邊緣開始,一邊捏褶一邊轉(zhuǎn)動(dòng)面皮,最后收口,捏緊,一個(gè)包子就包好了。再簡單團(tuán)一團(tuán),整理整理形狀,然后放進(jìn)蒸鍋,先別開火,再醒發(fā) 20 分鐘。
