食材清單:
五花肉300克
蒜苗5根
郫縣豆瓣醬1大勺
甜面醬1小勺
豆豉1小勺
老姜1小塊
料酒1大勺
大蒜2-3瓣
生抽1小勺
白糖小半勺
食用油
制作步驟:
1.五花肉冷水下鍋,丟姜片,再淋入1大勺料酒。大火燒開后撇去浮沫,然后轉中小火,蓋上鍋蓋,煮20-30分鐘。撈出來,別急著切!立即放入冰水中浸泡一會兒。
2.蒜苗洗干凈,斜著切成大約3-4厘米長的段。記得,蒜白部分和蒜葉部分分開放,它們下鍋的時間不一樣。五花肉徹底涼透了,擦干水分,切成厚度均勻的薄片。
3.鍋燒熱,放一點點油潤鍋。五花肉片一片片下到鍋里,用中小火慢慢煸炒。不斷翻炒,把肉片里的豬油慢慢煸出來。肉片逐漸變得透明,開始微微卷曲,邊緣變得焦黃。煸出來的多余豬油,盛出來一些。
4.肉片撥到鍋的一邊,火候調到小火。加入1大勺提前剁細的郫縣豆瓣醬和豆豉,再加入甜面醬,用小火慢慢炒出紅油和濃郁的醬香味。
5.醬香味出來后,把肉片撥回來,快速翻炒均勻,讓每一片肉都均勻地裹上紅亮的醬汁。沿著鍋邊烹入1小勺料酒,去腥增香。再加入1小勺生抽,小半勺白糖提,快速翻炒幾下,讓味道融合。
6.切好的蒜苗白部分丟進鍋里,快速翻炒20秒,等蒜苗白微微變軟,香味出來。把蒜苗葉部分也加進去,火稍微開大一點,用大火快速翻炒。炒到斷生,顏色變得油亮翠綠,就可以。
7.蒜苗葉一斷生,立馬關火!淋上幾滴香醋,將這色香味俱全的蒜苗回鍋肉盛入盤中!那撲鼻的香氣,紅亮的肉片夾雜著翠綠的蒜苗,嘖嘖,是不是已經忍不住想去盛米飯了?
