刷到美食視頻里,紅亮翻滾的毛血旺,口水止不住地流?別再眼饞了!這道看似復(fù)雜的川菜經(jīng)典,其實(shí)在家就能輕松復(fù)刻。跟著我的步驟,30分鐘端出一鍋香氣撲鼻、麻辣過(guò)癮的毛血旺,連湯汁都能拌飯吃三大碗!
食材清單:
鴨血300克、毛肚200克、午餐肉150克。
配菜:
黃豆芽150克、豆皮1張、萵筍1根、金針菇1小把。
靈魂調(diào)料:
火鍋底料100克、干辣椒1小把、花椒1小把、蒜末2大勺、姜末1大勺、蔥花量、鹽和生抽。
制作步驟:
1.鴨血切成 0.5厘米厚的薄片,冷水下鍋,加入1勺料酒和少許姜片,小火煮5分鐘撈出。
2.毛肚洗凈后,用刀片成薄片,再切成三角形。
3.燒一鍋開(kāi)水,先放入黃豆芽,煮2分鐘撈出,鋪在大碗底部;接著依次放入豆皮、萵筍、金針菇,焯水1分鐘后撈出,放在黃豆芽上。
4.鍋中倒少許油,油熱后,放入姜末、蒜末,炒出香味,接著加入100克火鍋底料,小火慢慢炒化,直到炒出紅油。
5.往鍋中加入1000毫升清水,大火煮開(kāi)后轉(zhuǎn)小火,加入1勺生抽和少許鹽調(diào)味,煮5分鐘,湯底充分吸收調(diào)料的味道。
6.放入煮好的鴨血和午餐肉,煮3分鐘;再放入毛肚,快速燙20秒,就撈出來(lái)。
7.煮好的鴨血、午餐肉和毛肚倒在鋪好配菜的大碗里,撒上干辣椒、花椒和蔥花。起鍋燒少許熱油,燒到冒煙后,直接淋在干辣椒和蔥花上,“滋啦”一聲,香氣瞬間被激發(fā)出來(lái)!
