首先準(zhǔn)備一盆清水,然后放入一小把的食鹽,攪拌均勻后將田螺倒進(jìn)去浸泡,這樣做的目的是為了讓田螺吐出體內(nèi)的臟東西。泡上一個(gè)小時(shí)左右就可以了。
接著我們?cè)賮?lái)準(zhǔn)備一下配料,大蔥切成段、生姜切片、大蒜拍扁、小米椒切碎備用。
在浸泡田螺的同時(shí),我們可以來(lái)處理一下田螺肉。用剪刀將田螺尾部剪開(kāi)一個(gè)小口子,這樣方便入味,再用手將里面的內(nèi)臟全部給它摳出來(lái),一定要多清洗幾遍,直到水變清為止。
下面鍋中加入適量清水,大火燒開(kāi)后下入田螺焯水一分鐘,撈出控干水分備用。
起鍋熱油,放入姜蒜小米椒爆出香味,然后再倒入田螺翻炒均勻,這個(gè)時(shí)候可以淋入一點(diǎn)料酒去腥增香,繼續(xù)翻炒一會(huì),讓田螺充分吸收調(diào)料的味道。
緊接著往鍋里加入生抽提鮮、老抽調(diào)色,翻勻以后撒入一些白糖提鮮,接著就可以下入事先準(zhǔn)備好的配料了,再倒入半碗啤酒,蓋上鍋蓋燜煮兩分鐘。
最后轉(zhuǎn)大火收汁,看到湯汁變得濃稠即可出鍋裝盤(pán),一道美味的爆炒香辣田螺肉就做好了。
