制作步驟:
1.帶皮五花肉整塊用流動的清水沖洗干凈,準備一個深煮鍋,放入五花肉,加入足量的冷水,放入生姜和大蔥,淋入少許料酒。大火燒開,撇去浮沫,繼續煮7分鐘。
2.撈出焯好水的五花肉,用溫水沖洗干凈。瀝干水分,五花肉切成4-5厘米見方的塊狀。如果想要成品更美觀,可以用棉線將每塊肉略微捆扎一下。
3.取一個炒鍋,中火燒熱。直接將切好的五花肉塊皮朝下,放入鍋中煎。先煎帶皮的一面,直到豬皮呈金黃色,并且微微起泡。然后將其余幾面也煎黃。煎好后,將肉塊夾出。
4.砂鍋底部鋪上一層蔥段和姜片,五花肉塊皮朝下,整齊地碼放在蔥姜之上。倒入黃酒,充分沒過肉塊,再加入老抽、生抽、冰糖、八角、桂皮、香葉。
5.蓋上砂鍋蓋,大火將鍋內湯汁燒開。燒開后,立即轉為最小的火,燉煮1.5至2小時。1小時后,將肉塊輕輕翻個面,讓上色和入味更均勻。
6.五花肉燉至用筷子能輕松戳透,肉皮Q彈軟糯時,打開鍋蓋,轉中大火開始收汁。收汁時,用勺子不斷將鍋底的湯汁舀起,淋在肉塊表面。湯汁變得濃稠,保留少量可以拌飯的精華時,可以關火了。
