把洋蔥切成兩半,再切成細絲,記得這里只用一半就行。切好后,把洋蔥抖散,放進盤子里。然后,把幾瓣大蒜先切片,再切成蒜末,放到碗里,最后放幾個辣椒段,實在受不了辣的可以不放。
這會兒苦瓜也腌好了,趕緊兌點清水,抓著洗一洗,能把表面的苦味素洗掉,吃起來就不會那么苦了。洗完控干水,撈出來放到盤子里。
鍋里放點水,撒點鹽,再滴幾滴油,攪動一下,準備焯水。焯水能把部分苦味去掉,這樣拌出的苦瓜不會那么苦。時間別太久,只要一變色就行了。現在可以把它撈出來,沖一下涼水,過涼后吃起來會更加脆爽哦。
把它撈出來,放進大碗里。鍋里加幾滴食用油,放入一把花生米,小火慢慢炒,別讓它炒糊了哦。炒的時候記得勤快點動動,等鍋里能聽到噼里啪啦的聲音,那就差不多炒好了。
現在把它盛出來,倒上提前熬好的花椒油,瞬間香味就被激發出來啦。再加上一大勺生抽、兩勺米醋,還有幾粒雞精來提鮮,最后撒點食用鹽調味。用勺子把這些調料攪拌均勻,確保都化開了。
把切好的洋蔥、炸好的花生米,還有調好的調料汁統統倒進去,再戴上一次性手套,開始攪拌。確保每一塊食材都沾上調料,這樣苦瓜才會更入味。攪拌均勻之后,盛到盤子里,就可以開開心心地享用了。
