酸奶奶油吐司的做法
- 面團材料中黃油以外的所有食材混合,
放入廚師機攪拌缸,
先用1檔低速將面團揉成團,轉2-3檔揉至面團呈光滑狀態
- 加入軟化的黃油,1檔將黃油逐漸揉入面團。
轉3檔繼續揉至能拉出透明薄膜的階段
- 滾圓
- 放入容器蓋上保鮮膜
放在25-28度的環境中進行基礎發酵
- 發酵至2~2.5倍大,手指蘸粉戳孔不回彈不塌陷
- 將發酵好的面團取出,輕拍排氣
- 稱重后等分為6個面團,160克左右/個
- 滾圓后蓋保鮮膜醒發20分鐘

- 翻面,分別自左邊和右邊向中間1/3處折疊
- 用搟面杖稍稍搟長
- 自上而下卷起
- 依次做好
- 三個一組放入吐司盒
- 放在溫度35度左右(不超過38度哦)濕度75%的環境下發酵
- 發酵至9分滿
手指輕摁表面可以緩慢回彈
- 放入預熱好的烤箱,下層
烤箱上管160度下管190度烘烤40分鐘出爐,頂部上色要及時蓋錫紙
- 出爐輕震脫模冷卻即可
