南瓜馬蹄糕的做法
- 把材料分配好備用
- 洲星這個(gè)牌子的馬蹄粉挺不錯(cuò)的、純正雜質(zhì)又少一直都喜歡用它
- 南瓜去皮切成片大火蒸10分鐘或者是用微波爐叮3-5分鐘。
- 南瓜蒸好后加入700克清水用破壁機(jī)或料理機(jī)打成汁備用。(用破壁機(jī)打出來的汁會(huì)比較細(xì)膩柔滑不用過濾都可以直接使用)
- 把250克馬蹄粉分成兩份150克、100克,把350克南瓜汁倒入裝有150克馬蹄粉的容器里攪拌均勻。
- 過濾去雜質(zhì)后備用
- 把另外350克南瓜汁倒入小奶鍋中加入160克白糖開中小火一邊煮一邊攪拌直至白糖溶化即可。
- 不用關(guān)火,在剛才調(diào)好的馬蹄粉漿里舀兩勺倒入鍋里快速攪拌均勻煮至稀糊狀離灶,再將調(diào)好的馬蹄粉漿和煮好的馬蹄粉熟漿一起混合均勻備用。
- 這就是混合好的熟漿,煮生熟漿是使成品的口感更加Q彈、所以這一步是不能偷懶的哦。
- 南瓜熟漿調(diào)好后,再來把小白漿調(diào)好就可以了、把400克椰漿、200克牛奶、20克白糖倒入裝有100克馬蹄粉的容器里攪拌至沙糖溶化。
- 攪拌均勻后過濾去雜質(zhì)刮下粉末顆粒即可。
- 熟漿和小白漿都混合完成了,接下來就是一層一層的蒸了。
- 鍋里加入足夠的清水放上蒸盤大火把水燒開煮沸,在蒸盤上刷入一層薄薄的玉米油這樣更容易完美的脫模。
- 舀三勺熟漿到蒸盤里蓋上鍋蓋大火蒸3-5分鐘至表皮透明凝固即可(如圖)
- 再舀兩勺小白漿到蒸盤里鋪平蓋上鍋蓋大火蒸3-5分鐘至表皮透白凝固即可(如圖)

選馬蹄粉一定要選純正的雜質(zhì)少的不要隨便亂買,椰漿呢一定不能用椰汁代替必須是椰漿哈、用椰汁蒸出來的糕風(fēng)味不止差一丟丟哦。
